Ippudo x SG Hawkers Collaboration Review: Hawker Heritage Set Exclusive to Their Marina Bay Sands Outlet!

To celebrate Singapore's vibrant and dynamic hawker culture, for the first time ever, IPPUDO is collaborating with local hawkers and zi-char stalls to deliver dishes with traditional hawker flavours to its local and international customers through its "A Global Edition: IPPUDO x SG Hawkers" campaign.

Zi-char, Hokkien for 煮炒 (zhǔ chǎo), it simply means ‘cook and fry’.

It is a comforting homely food for many of us Singaporeans.

An exciting debut collaboration - IPPUDO has worked with three local homegrown F&B businesses- Da Dong Prawn Noodles, Jin Ji Teochew Braised Duck & Kway Chap, and Keng Eng Kek (KEK) Seafood. These businesses have captured the heart of Singaporeans through their comforting local dishes that represent Singapore's cuisine.

Now, let's move on to the new dishes from the Hawker Heritage Set featuring IPPUDO's signatures paired with local favorites from the three brands! The Hawker Heritage Set includes one main dish, The Hae Ramen, and two side dishes, Lor Ark Bun and Kopi Chicken Karaage.

What we had:

The Hae Ramen

This bowl of goodness is filled with broth made using Da Dong's prawn soup and IPPUDO's signature tonkotsu and thin noodles topped off with some prawns, deep-fried pork lard, beansprout, fragrant fried garlic, chives and tamago. It also comes with a serving of Li Nanxing's Hae Bee Hiam paste.

We were told that there are two ways to enjoy the ramen. First, we tried the original taste of the broth. It is thick and flavourful without being overly intense. With every sip, there is a rich umami taste, and the broth is slightly more on the saltier side to me.

Next, we added Hae Bee Hiam paste into the broth to spice it up a little and it leaves a deep impression on me! It was more flavourful and comforting.

The prawn shells were easy to remove but wished the prawns were fresher.

Lor Ark Bun

Sink your teeth into this pillowy soft bun stuffed with Jin Ji's sliced braised duck coated with gravy. The duck is incredibly tender and the gravy was savoury. Unfortunately, it would have been better if there was more gravy as the meat gets dry after a few bites.

Kopi Chicken Karaage

This side dish was undoubtedly a delectable one, especially with the Michelin starred restaurant, KEK Seafood's bittersweet coffee sauce glazed smoothly over the chicken karaage. It tasted exactly like the Coffee Pork Ribs that you would find in a zi-char store.

The coffee sauce was aromatic and it gives the juicy chicken karaage a great depth of flavour.

Final Thoughts

If you are looking for a place to enjoy Japanese cuisine infused with local hawker flavour, this is the right place to go! Overall, I was amazed by the dishes and would definitely recommend you to try them as it is worth the money.
